Chicken Rice Bake
1 cup regular rice
1/4 envelope onion soup mix (2 TB)
(usually I just use
a whole packet)
1 can cream of mushroom soup
1 soup can water
2-8 pieces of chicken, depending on size (I usually
use 4
boneless chicken breastes
or 8 thighs)
Butter an 8x8 casserole dish. Combine rice, onion
soup mix, soup and water.
Pour into casserole dish and place chicken on top.
Cover with foil and bake at
300 for 3 hrs or 350 for 1 1/2 hrs. This recipe
can easily be doubled or tripled
for more servings. Usually I add a small can of sliced
mushrooms also.
