Pumpkin Nut Roll
Beat 3 eggs at high speed 5 minutes
Add 1 cup sugar
fold in 2/3 cup pumpkin & 1 tsp lemon extract
Stir together 3/4 cup flour
1 tsp ginger
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
Stir into pumpkin mix but don't overmix or will
be tough
Pour into well greased jelly roll pan/cookie sheet,
top with 1 cup chopped walnuts
Bake 12-15 minutes at 375
Dust paper towels with powdered sugar and carefully
roll up; cool.
Filling:
1 to 1 1/2 cups powdered sugar
4 TB butter
8 oz cream cheese
1 TB vanilla
Beat together until creamy, spread on cake and
re-roll
